Five stars for our very first millet recipe creation! We made curried millet and tofu for dinner. Simply divine! Kimberly and I are busy preparing healthy, delicious recipes for our upcoming Gluten Workshop. Millet, an ancient seed, is super-high in nutrients and super low in cost. Whether you require a gluten-free lifestyle, vegan, or just love eating healthy whole foods, millet is incredibly versatile. Around the world millet is featured in breakfast, lunch, dinner and dessert. Why isn’t this fabulous, fascinating grain more popular here? Beats me! That said, it has duly earned its way into our pantry. (Watch for Kimberly to post a ‘what is millet’ feature in the Kimberly’s Pantry Picks column). We are delighted to share this curried tofu and millet recipe with you just for asking! One cup of millet expanded to satisfy a family of four (at least!). I can’t decide if I’d put millet in the polenta, rice, or mashed potato category. Perhaps ‘all of the above’. Depending on how it is prepared, millet can be served fluffy or creamy. Kimberly J Cohen, MSN,FNP-C, is a Board Certified Cardiovascular Nurse Practitioner at the American Board of Cardiovascular Medicine since 2015. She has 9+ years of acute care experience at Baptist Memphis Memorial Hospital working with Stern Cardiovascular. Kimberly graduated with a BA in English Literature at University of Connecticut then went on to get Bachelors of Science in Nursing at Southern Connecticut State University. She was a registered nurse for 15 years in the cardiothoracic intensive care unit before obtaining her Masters of Science in Nursing (MSN) at the University of Memphis. Kimberly is also a certified integrated health coach (INN) and lovingly encourages others to maintain a healthy lifestyle and live their best lives. She is a proud mother of four young men (including identical twins) plus a stepson and stepdaughter. She is married to possibly the funniest man on earth. Kimberly is a voracious reader, is a fitness enthusiast, enjoys travel and culinary adventures, practices yoga and advanced hula hooping. Here happy place is spending time at her lake house in rural Tennessee with husband Stuart.
