Five stars for our very first millet recipe creation! We made curried millet and tofu for dinner. Simply divine! Kimberly and I are busy preparing healthy, delicious recipes for our upcoming Gluten Workshop. Millet, an ancient seed, is super-high in nutrients and super low in cost. Whether you require a gluten-free lifestyle, vegan, or just love eating healthy whole foods, millet is incredibly versatile. Around the world millet is featured in breakfast, lunch, dinner and dessert. Why isn’t this fabulous, fascinating grain more popular here? Beats me! That said, it has duly earned its way into our pantry. (Watch for Kimberly to post a ‘what is millet’ feature in the Kimberly’s Pantry Picks column). We are delighted to share this curried tofu and millet recipe with you just for asking! One cup of millet expanded to satisfy a family of four (at least!). I can’t decide if I’d put millet in the polenta, rice, or mashed potato category. Perhaps ‘all of the above’. Depending on how it is prepared, millet can be served fluffy or creamy. Do you have experience cooking millet? Do share! – Stuart Lloyd Coyen
